Having a prepared entree in your freezer is one of my favorite tips for meal takers. If your main dish is ready-to-go, putting the rest of the meal together is so easy! 

These enchiladas freeze easily and you can double the recipe to make two, 9x9 pans. 

Here are some other tips:

  • Use rotisserie chicken if you don’t want to cook chicken

  • Use ground beef as an alternative or double the beans for a veggie version

  • To make it gluten free, don’t use tortillas.Instead, put the filling directly in the 9x9 pan and top it with crushed tortilla chips.

  • Wrap the aluminium foil around the entire pan, sealing all of the edges, to keep it fresh in the freezer

  • Use a Sharpie to write the reheating directions on the foil before freezing. You will thank yourself later!

When taking these enchiladas to a friend, I like to add a bagged salad, fresh fruit, and mini cupcakes to add a little sweet ending to the meal. 

Depending on the occasion, I may include a small plant in my delivery as well. I recently saw Trader Joe's carrying these adorable little bird planters. They are so cute!
