
I’m not a food photographer, but it tastes delicious!
The amount of protein I currently see my active, young adult children consume is mind boggling! Ha! I have never bought so much ground turkey, chicken thighs, eggs, Greek yogurt and Chomps (beef sticks) in my life! It’s hard work keeping them fueled, even with their help!
While I’m no longer active at their level, I know that getting enough quality protein is important for my health as well. Since eating protein matters and I don’t see an end to their athletic adventures in sight, I decided to start researching some high protein meals. Not only does it help to build and repair muscles, skin, and bones, but it supports our immune health.
I typically don’t look for recipes on powerlifting websites, but that's where my search for high-protein meals eventually led me. Then, I came across a conversation on Reddit where people were also looking for an easy, protein-filled meal. This wasn’t provided as an actual recipe, but just a list of suggested ingredients, so I created my own recipe.
I made it for my family, and they loved it! It could not have been easier, and it also happens to be both gluten-free and dairy-free (if you omit the cheese).

Protein-Packed Taco Bowls
Ingredients
2 lbs lean ground turkey
2 cups quinoa (yields 4 cups cooked)
4 cups reduced-sodium chicken broth
1 packet taco seasoning (I use a gluten-free variety)
2 cans organic corn
2 cans organic black beans
½ cup shredded cheddar
1 container fresh salsa (or your favorite salsa)
Directions
Cook the quinoa in 4 cups of boiling reduced-sodium chicken broth for 12–15 minutes, or until most of the broth has been absorbed.
While the quinoa is cooking, brown the ground turkey in a skillet. Once cooked, add ⅔ cup water and the taco seasoning packet.
Drain the corn and place it in a bowl.
Drain and rinse the black beans. Then, add them to the bowl with the corn and stir to combine.
To make your bowls, layer the quinoa, ground turkey, and corn and bean mixture, topping it off with shredded cheddar and salsa.
Serve with tortilla chips if desired, and enjoy!
This recipe makes 8 bowls with more than 32 grams of protein per serving.
