A Go-To Gluten-Free Dessert
I have to start with one of my all-time favorite gluten-free desserts that will be liked by everyone.
My friend, Maureen, shared this strawberry cake recipe with me back in 2016, and it has been a staple ever since. I made it for Easter this year and everyone loved it! As someone who has eaten gluten-free for a long time, Maureen always has the best recipes (she even curated the Take Them A Meal recipe section!).
A few notes before you make it:
If you have trouble finding the cake mix, Target offers it online.
The frosting will seem dry at first—keep mixing!
This doesn’t have to be gluten-free. Even just the frosting is worth making and can be used on any vanilla, chocolate, or strawberry cake.
Yummy Gluten-Free Strawberry Cake
Ingredients
1 box Betty Crocker Gluten-Free Yellow Cake Mix
¾ cup canola oil (or applesauce for a lighter option)
½ cup water
4 eggs
1 (3 oz) package strawberry Jell-O
Mix all ingredients and bake at 350°F in a 9x13 pan for 25–30 minutes. I would start watching it in 20 minutes. You don’t want to cook it too long and dry it out.
Icing
½ cup fresh or frozen (thawed) strawberries
½ cup butter
1 lb powdered sugar
Beat all ingredients thoroughly and ice cake.
An Organization Worth Knowing About
I recently learned about an organization called Safe Families for Children, and I’m so glad I did.
All parents need support, but not everyone has a strong, dependable network to lean on during difficult seasons. When families face challenges like job loss, housing instability, or other crises, it can quickly become overwhelming. I recently learned about an organization called Safe Families for Children that comes alongside families during these difficult times.
Safe Families for Children steps into that gap.
Safe Families provide host Families that open their homes to care for children while parents work to regain stability. Around them, a “Circle of Support” provides encouragement, resources, groceries, and meals—helping families stay together and avoid entering the foster care system.
There are several ways to get involved, including:

There truly is a role for everyone.

A Simple Kitchen Tip
A quick, practical tip especially for those of you who take meals often.
One of our readers, Diane J., emailed me and shared the idea of using disposable shower caps to cover food bowls. I thought that was clever, and it turns out they actually make food covers that work the same way.
These are especially helpful when plastic wrap just won’t stick (we’ve all been there). They stretch easily over bowls and make transporting food much simpler.
