40 Aprons Best Ever Tom Kha Gai Soup (Better Than Takeout) Photo Credit: 40 Aprons

I’m a huge fan of soup season because not only is it comforting, but also easy to make and share. You can make enough for your own family and freeze some for another time. Maybe you’ll pull it out when you’ve had a busy day or when you hear of a friend who could use a hand.

As always, my favorite recipes are submitted by people who make them and recommend them to others.

Here are 5 soup recipes you definitely want to try this soup season:

The verdict: Delicious and freezer approved.

If you love a hearty, creamy potato soup, this one is a winner.

The verdict: A go-to favorite with a smart freezer trick.

This is a favorite, go-to soup. If you're freezing it, leave out the tortellini and add the pasta after thawing. You can even cook the pasta separately, so everyone can add as much as they like.

The verdict: Makes a lot and people love it.

This recipe requires a little more prep, but the payoff is a big batch of delicious soup.

The verdict: Everyone should try this soup at least once. It might be your favorite ever!

Tom Kha Gai is Thai Coconut Chicken Soup. It’s creamy (from coconut milk), the chicken is tender, and the mushrooms add to the heartiness.

The verdict: Perfect for the season and can be made on the stovetop or using an Instant Pot.

Full of seasonal veggies like sweet potatoes and kale, this soup is gluten free as long as you use a gluten-free veggie or chicken broth. If you’re a fan of Old Bay, this one is for you!

A Few Soup-Freezing Tricks

Leave the pasta out. Pasta doesn't freeze particularly well. Cook it separately and add it when you reheat the soup. Potatoes can be tricky, too.

Freeze soup flat. Freezer bags take up much less room when you lay them flat while they freeze. Once solid, they can be stood upright like books.

Try Souper Cubes. Souper Cubes are a favorite way to freeze individual portions of soup.

Don't be afraid to make substitutions. Soup is very forgiving! You can swap out one bean for another, sweet potatoes for pumpkin, kale for spinach, and even chicken for beef.

Did you know that we sell quarts of soup in our online store? Honestly, I think it’s one of our best kept secrets. The soups are made from scratch by our chef, Mari, who is from Cuba. You can order a five quart variety pack and it gives you five easy dinners for your freezer.

Warmly,
Adina
